Banana Bread (no butter)

Dairy free version
1 cup
caster or soft light brown sugar2
eggs4
bananas, mashed2 cups
plain flour1 tsp
baking powder½ tsp
salt2 tbsp
oil3 tsp
ground ginger (optional)
Cream sugar and eggs together
Mash bananas, add to mixture.
Blend in well.
Sift flour, baking powder, salt and ginger if used.
Stir in dry ingredients to wet mix gradually.
Turn into well greased loaf pan.
Bake in oven gas 4, 80 mins
Remove from oven, let stand in pan a few minutes, then remove to cool.
