½ cup / 120gbutter
1 cupcaster or soft light brown sugar
2 cupsplain flour
1 tspbaking powder
2 tspground ginger (optional)
½ cupchopped nuts (optional)
½ cupchocolate chips (optional)
Cream butter, add sugar gradually. Cream together
Add eggs, one at a time, beating each one in thoroughly.
Mash bananas, add to mixture.
Blend in well.
Sift flour, baking powder, salt and ginger if used.
Stir in dry ingredients to wet mix gradually.
When well mixed, add nuts if used.
Turn into well greased loaf pan.
Bake in oven gas 4, oven 180°C, fan 160°C, 80 mins
Remove from oven, let stand in pan a few minutes, then remove to cool.
