¼ cupvinegar (malt, apple cider, white, and rice wine are all good)
1 clovegarlic crushed
½red or white onion, sliced
In a small bowl add the vinegar, sugar, and salt. Stir to combine and until the sugar and salt have dissolved. Add the peppercorns, bay, garlic and stir.
Add cucumber and onion and enough water so the vegetables are submerged. Taste and adjust the ingredients to your liking.
Let the mixture rest in the fridge until you are ready to eat.
