Sweet & Sour Sauce

• ½ cup cider vinegar
• 1 cup caster sugar
• ¼ cup cornflour
• ¾ cup water or½ cup water and¼ cup pineapple juice
• 2 tbsp light soy sauce
• 1½ tbsp ketchup
• 1 tsp ground ginger
• pinch dried red chilli (optional)

In a saucepan combine all ingredients. Bring to a simmer, whisking to keep smooth.

Keeps for several weeks in the fridge in an airtight container
