2 cupsplain flour
1 tspkosher salt
2 cupsmilk (room temperature)
4 largeeggs (room temperature)
½ cupbeef pan drippings or vegetable oil
Preheat oven to fan 220°C/gas 8.
Combine flour and salt in a large mixing bowl, stand mixer or food processor.
Incorporate milk and eggs whisking until smooth
Cover and rest batter for 30 minutes.
Divide the drippings or oil between the bun tin/muffin pan cups and place in oven.
Wait until oil is smoking hot, whisk batter again and pour⅓ cup batter into each
Bake for 12-15 minutes or until puffed and golden brown.
