Hash Browns

3 medium
potatoes, peeled½ large
onion1
egg, beaten- Salt and pepper
- Oil for frying
Coarsely grate the potatoes and onion
Into a pan of boiling water, place the grated potato and onion and boil for a few mins until just turning translucent.
Tip into a clean tea towel and then squeeze out the excess liquid by twisting the towel.
Add the beaten egg, salt the mixture well (otherwise the hash browns can be quite bland), plenty of freshly ground black pepper and mix well.
Place a large tbspful of the mixture, in shallow, medium hot oil and shape into a patty. Fry until golden brown on both sides
