Quick pickled onion and cucumber

¼ cup
water¼ cup
vinegar (malt, apple cider, white, and rice wine are all good)1 tsp
salt2 tsp
sugar½ tsp
salt5-6
whole peppercorns1
bay leaf1 clove
garlic crushed¼
cucumber, sliced½
red or white onion, sliced
In a small bowl add the vinegar, sugar, and salt. Stir to combine and until the sugar and salt have dissolved. Add the peppercorns, bay, garlic and stir.
Add cucumber and onion and enough water so the vegetables are submerged. Taste and adjust the ingredients to your liking.
Let the mixture rest in the fridge until you are ready to eat.
