Spiced Red Cabbage

1 tbsp
olive oil3 cloves
garlic, chopped½ cup
sliced onion½
red cabbage, sliced thin2 cup
cooking apple sliced thin¼ cup
water2 tbsp
soft brown sugar2 tbsp
cider vinegar¼ tsp
salt⅛ tsp
black pepper1 tsp
cumin seed1 tsp
fennel seeds½ tsp
grated nutmeg
Saute onion and garlic in oil for 1 minute.
Add cabbage and apples and saute for 3 minutes.
Add the remaining ingredients and stir well.
Cover.
Cook over low heat 35 - 40 minutes.
Sprinkle with caraway seed if desired.
