Sweet & Sour Sauce

Classic british takeaway sauce for use with Chinese Battered Chicken for Sweet and Sour
½ cup
cider vinegar1 cup
caster sugar¼ cup
cornflour¾ cup
water or½ cup water and¼ cup pineapple juice2 tbsp
light soy sauce1½ tbsp
ketchup1 tsp
ground gingerpinch
dried red chilli (optional)
In a saucepan combine all ingredients. Bring to a simmer, whisking to keep smooth.
Keeps for several weeks in the fridge in an airtight container
